Cooking a Filet Mignon?
I recently had a steak and egg sandwich, which was pretty good. I was wondering if it were possible to cook a filet mignon, then throw a poached egg on top, and top it with a red wine pan sauce. Would this work and should I put anything else in it or any other suggestions?
@docker... I agree with the expensive part. This is actually something I'm cooking for a birthday dinner and wanted to try it and make sure it was good first.

Sounds good but id do that with a less expensive cut of steak, filet mignon should be enjoyed all by its self.
