I finished two associate degrees in Computer Networking and CyberSecurity, what kind of jobs/pay should I look for?

Many companies only fill their entry level jobs through agencies.  So find your local staffing agencies that specialize in IT and apply there.  That will be the best place to start.  Also, look for local IT networking groups (you can find them on LinkedIn, Meetup, etc.).  For example, ISSA is a great one for infosec.  Go to the meetings and start meeting people and making contacts.  

Also, while you're job hunting, become a hard core nerd.  Build yourself a home lab and do something cool.  Practice hacking or programming or make a home entertainment system out of a raspberry pi.  There is a specific purpose for doing this.  The point is to take something you are unfamiliar with, teach yourself how to use it, and then do something cool with it. This is an excellent way to get hands on experience to compliment your degrees while you job search (and even after you find the job).

Whatever you can get. You have no real world experience, and you're competing for jobs with H1B's with master's degrees. You have to work your way up from the bottom.

Id look to get a 4 year degree. Very few places are looking for people with 2 year degrees. But maybe the school has some suggestions?

The only way a 2 year degree would really matter is if the job came down to two people both the same, they would choose the one with the 2 year degree over one with hs only.  Even 3-6 months experience is worth as much as a 2 year degree in practical terms. The benefit of a 2 year degree is 2 more years of maturity. That usually benefits males more than females. My 15 year old niece is more mature than I was at 21.

You can often finish up your final 2 years part time on nights & weekends. Even if it takes 2-3 more years its probably worth it.  I quit about 3 years in and planned to go back & finish but my job was 50 hours and that left less time. And too much work & school can lead to burnout.

Most large businesses, colleges, and universities, have an IT department. You could work in an entry-level position there.
