I guess young Earth creationists have some explanation, but I've not yet heard it. Can someone tell me, if God created the universe six....?
...thousand years ago, how is that we can see stars that are more than six thousand light years away, as the light from them should not yet have reached us?

I'm a believer in what's known as the Gap Theory in the Bible where it is believed that there is a big gap in time between Genesis 1:1 and 1:2.
1In the beginning God created the heaven and the earth. 2And the earth was without form, and void; and darkness was upon the face of the deep. And the Spirit of God moved upon the face of the waters.
I believe that mankind and the creation on Earth as we know it today was created 6,000 years ago but I believe the Earth and the stars are much much older.
There was a 4 or 5 hour study of scriptures that point to this conclusion that I watched a few years ago and I'd be hard pressed to try and show you this in a couple paragraphs but if your interested try looking for "the Gap Theory".

That premise assumes that the stars were created in infancy. To accommodate the Exodus 20:11 affirmation, the universe was spoken into existence, Psalm 33:9, in a way to allow for light travel.

I agree with Matt. I hold to the gap theory as well.
Evolution is a lie and creationism is true. However, beware of those who say you must believe the earth is only 6,000 to 10,000 years old. Young-Earth Creationism is also an error. The truth is that there is a gap of time (possibly hundreds, thousands, or even millions of years) between Gen. 1:1 and 1:3. God judged the previous earth after Lucifer's rebellion, and the six days (which are literal 24 hour days) mentioned in the first chapter of Genesis are actually a restoration (or recreation) of the earth. Because we have all sinned against a perfectly holy and righteous God, we all deserve eternal separation from God in hell (Rom. 6:23). However, God loves us so much that He sent His only Son Jesus to die on the cross as our Substitute so we don't have to go to hell. Christ died for our sins, was buried, and rose from the grave three days later (1 Cor. 15:3-4). He gives eternal life freely to anyone who simply believes in Him for it. No one can be saved by doing good works. Salvation is by grace alone through faith alone in Christ alone (Eph. 2:8-9).
"Verily, verily, I say unto you, He that believeth on me hath everlasting life" (John 6:47).

Young Earth Creationist give their "EXPLANATION" the issue is they have yet to DEMONSTRATE the 1st CAUSE the god its not based on what "IS" DEMONSTRABLE YEC are based in in AUTHORITARIANISM cause PERSON "X" said their god proposition did an action so so any question other than demonstrating the god is IRRELEVANT and is not requiring a response YEC have a BURDEN of proof of their god claim without that their Creation claim also has no merit KEEP IT SIMPLE and to the original god claim all other claims are a DISTRACTION to put others in a defense position of distraction stay with the 1st cause
the SOURCE of all god propositions are certain PEOPLE( theist ) many who also claim they as PEOPLE are "SPECIAL" and have SPECIAL POWERS and ABILITIES and COMMUNICATIONS POWERS with "THE " god they are promoting and many assert they are CHOSEN to have these SUPER HUMAN skills and powers
as if they as people are "SUPER - NATURAL" have powers other humans do not have its like certain THEIST are SUPER-MAN

The typical explanation I've seen from them
is that the speed of light has not always been constant, has not always been what it is now.

I AM NOT CREATIONIST. Just wanted to make that clear.
But, they do have an explanation, a couple actually. One is that the light was created in transit. The other is that space conforms to hyperbolic geometry and time passes much faster here than it does elsewhere in the Universe. There is also scepticism about Cepheid variables because there are two types, which undermines the distance ladder.
But obviously all that is b0ll0x. Interesting b0ll0x though.

And even if that were true, at 6000, then only now are we able to see them.

Here's one for you to think about, but don't think too hard. If the universe is expanding at the speed of light, then how can any light reach us? It's actually a calculus problem, but let me simplify. The light is expanding with the universe, therefore as it travels the points along the lights path converge on infinite points, and the time to travel from point to point converges on an infinity short amount of time. (.....scratch that line of thought. That wasn't going in a simplified direction.)
In other words. Blow up a balloon with some foam in it. The foam is all over the outer edge of the balloon. It expanded with the balloon at the speed that you blew it up. Something like that. I really don't know if foam would do that in a balloon, but it was the best visual I could think of.

That is a reasonable question. However, the answer is given in several passages of scripture. When God created the universe, He stretched the heavens (Isaiah 40:22, 42:5, 45:12; Zechariah 12:1; etc.). Stretching the heavens is a function of displacement of objects and extending the light at the same time.
