How to calculate the body decomposition?

On detective shows, they always seem to calculate the body decay based on humidity and body mass.

How do they calculate this? (was there also other variables that they have to calculate in?)

Please also try to explain in English instead of just a set of numbers and try not to use jargon...

    The major variable is TIME. Others are insects and animals and whether large open wounds are in evidence. Temperature is another.The hotter the quicker the decay, up to a certain point.There is a place called The Farm where the FBI and other police agencies study this question under a wide variety of conditions.Check it out,
