A novice question from a not so novice vegan?

Well I recently separated from my (ex) man who used to do all the cooking. (and it was excellent!) He used to make everything for get togethers. I am going to a party next weekend with people who love to criticize my diet ( in a friendly teasing matter) and now its my turn to impress! What is a good and simple vegan dish to bring to a barbecue/potluck type party? Salad type dishes, and something I can make easily in bulk. Thanks in advance!

I guess I should of been more specific, as I can cook I am just not so creative.

They are the gruff type if you know what I mean..I am looking for something that is simple but will blow them away! :)

    Vegan Edamame Fried Rice

    This vegan side dish is deceiving -- it looks so basic, but yields a very flavorful finished dish. Edamame is a young harvested soybean. It's an awesome, buttery, yummy veggie and comes both in and out of the pod, you want to buy the pre-shelled frozen variety so you don't have to mess around with the pods.

    1 Tablespoon extra-virgin olive oil

    2 carrots, shredded

    1 yellow bell pepper, chopped

    5 scallions, minced

    3 to 4 tablespoons soy sauce

    3 cups frozen edamame, defrosted

    4 cups long-grain brown rice (cook and cool the rice ahead of time)

    1. Heat oil in large wok or skillet over medium-high heat. Add carrots, bell pepper and scallions, and stir-fry until just tender, about 2 minutes.

    2. Add soy sauce, defrosted edamames and cooked rice, and stir-fry until combined and heated through, about 5 minutes. Serve.

    Yield: 4-6 servings (you can double or triple the recipe if you need more!)

    When all else fails, pasta almost always works. Just cut up some veggies, cook the pasta (a short pasta like fusilli or penne), make a simple dressing, and pour over the pasta when you arrive.

    This time of year, a nice Taboulli is awesome-it is a cracked wheat salad, that has mint, cucumber, parsley, and lemon in it-you can also add tomatoes. Its good stuff, can be made ahead, keeps well, and is easy to double up the recipes. Its great on its own, or served in lettuce "cups"-using endive lettuce leaves or small butter head lettuce. Have fun at your party!

    If you want it to taste better add a little cumin. Reserve a few chick peas to garnish dip with. Sprinkle with a little cumin and drizzle top of dip with very good olive oil.

    To make pita chips just cut pita into wedges and toast in the oven until crispy. You can brush with oil 1st for added flavour & crunch.

    Pasta salad is always good. I use Italian dressing in lieu of mayo, and put in lots of chopped up veggies, sometimes nuts. You may want to forgo the nuts in case anyone has any allergies.
