How to cook Duck Rice, chinese way ???

I'm looking for this recepies every where. But ending with Peking Duck... a real way of making it.. so somebody.. everybody... any thing.. to help me ..????

Update:

A real DUCK Rice... recepies . Not Peking Duck... or Hong Kong Duck . But Duck Rice. Like a complete Hainan Chicken Rice. From The soup, The rice, The Chicken , The sauce. But this is Duck version. Cant do the Duck with the Chicken rice way.. Cause the duck got that smell. so.. anyone.. anybody... plzzz help??

    It would help if you were a bit more specific. Are you looking for recipes for Peking duck, Hong Kong style roast duck or Teochew style braised spiced/soya duck ? For Peking duck, it is not eaten with rice but pancakes.

    Edit: Ok, below is a recipe for Teochew style braised 5-spice duck. It can be served with plain steamed white rice, but I've also included a recipe for yam rice which is a popular rice accompaniment. As for soup, duck & salted vegetable soup should whet the appetite with its slight tartness.

    A) Braised Soya Duck:

    1 duck about 2kg (4 lb)

    2 tsp 5-spice powder

    1/2 tsp salt

    4 tbl thick dark soy sauce (a bit sweet)

    2 tbl light soy sauce

    5 slices galangal or ginger

    2 tbl sugar

    3 cups water

    4 cloves garlic with skin on, lightly crushed/bruised

    2.5 cm (1 inch) cinnamon stick

    2 pieces star anise

    Rub inside & outside of duck with mixture of 5-spice powder, salt & both types of soy sauce. Let it marinade for 2 hours, occasionally turning over to coat evenly. Stuff the ginger into the duck's cavity before cooking.

    Put the sugar with a little water into a wok or large pot and cook until the sugar turns golden brown. Add 3 cups of water, garlic cloves, cinnamon, star anise & the remaining duck marinade, then add the duck. Cover and simmer for about 1.5 hours until the duck is tender. Turn the duck occasionally during the cooking process.

    When cooked, remove & cut up the duck. Serve pieces of duck on white rice with some gravy poured over it. Accompany it with slices of fresh cucumber & tomato.

    B) Yam Rice:

    4 cups (600g) rice, rinsed and drained

    10 pieces dried shiitake mushroom, soaked, drained and diced

    20g dried shrimp

    400g yam, peeled and diced

    2 tbsp cooking oil

    700ml water

    a pinch of white pepper powder to taste and

    cooking oil for deep frying

    Sauce:

    2½ tbl oyster sauce

    2 tbl sesame oil

    1 tbl dark soy sauce

    Deep fry yam until golden brown. Drain excess oil away.

    Heat oil in wok, add dried shrimp and dried mushroom and stir fry until fragrant.

    Add water to washed rice and leave it to cook in the rice cooker. When the mixture begins to boil, add in all the ingredients and sauce. Mix well. Let the yam rice finish cooking in the rice cooker before serving with braised duck.

    (Note: you can also serve this yam rice as a meal on its own by adding some diced skinless chicken breast pre-marinated for 30 mins with oyster sauce & cornflour, then stir-fried with the dried shrimps & mushrooms).

    C) Duck & Salted Vegetable Soup:

    500g Chinese salted vegetables (kiam chye)

    4 cups stock made with giblets & carcass from duck

    1 tomato, cut into wedges

    white pepper

    Soak salted vegetables in water for 1 hour, changing water a few times to remove excess salt. Rinse and chop roughly. Boil stock (add a chicken stock cube if flavor not enough), add salted vegetables and simmer for 30 mins. Add tomato and cook for another 5 min. Serve with a dash of white pepper.

    Chinese Duck Rice

    Ingredients:

    Duck breast

    Shallots

    Mushrooms (crimini, shietake)

    Green onions

    Steamed rice

    Method:

    Duck breast will usually come with the skin, which is really fatty and thick. Separate the mean from the skin/fat and cut up some of the fat that will be used for cooking.

    1. Heat a pan to med high and place small amount of the duck fat and some olive oil.

    2. Add minced shallots and chopped duck breast. Add salt and pepper.

    3. Let the meat brown a bit and add finely chopped mushrooms. Then add soy sauce to taste.

    4. Turn off heat and add chopped green onions.

    5. Serve on top of steamed rice.

    fried rice is a chinese invention, traditional japanese preferred their rice just steamed and plain without much "alteration". but since chinese and other cusines (i.e. korean, indian, etc) are very popular in japan, you can find cha-hun (direct translation of chinese "fried rice") just about everywhere in japan, yes you can find a variety of fried rice in japan, including shrimp fried rice.
